Because we love to share our knowledge about kombucha, we decided to put together this kombucha 101 introduction course. It's time to lift the veil and uncover the magic of kombucha. Here we go ...






What is kombucha?

Kombucha is a living health drink made by fermenting tea and sugar with the kombucha culture (scoby). The first recorded use of kombucha comes from China & Japan in 221 BC during the Tsin Dynasty. It was known as 'The Tea of Immortality'.

Though it's been around for a long time and has been a hearty staple of the alternative-health market, kombucha recently made its way back into the spotlight as a social trendsetter, generating 30million in sales in 2007, 1 billion in 2018 and a prediction of 5.5 billion in 2025.


How is kombucha made?

Kombucha is made with 4 basic ingredients, water, tea, sugar and a scoby. The sweet tea is fermented by a community of organisms into a delicious sour tonic beverage. That community of organisms is also called a 'scoby'. Scoby stands for 'symbiotic culture of bacteria & yeast'. During the fermentation, the sugar in the tea is transformed into organic acids and enzymes.









There are many different recipes out there. But most of them combine the elements above. Some companies choose to pasteurize their kombucha. This creates a shelf-stable kombucha but kills all the natural occurring living microorganisms. Some add flavourings, aroma's or sweeteners to create different flavours. Yugen prefers to keep its brew raw (alive & kicking) and 100% natural (only dried herbs and cold-pressed juice).


Is kombucha healthy?

Many people drink kombucha for its perceived benefits, such as naturally occurring living microorganisms, detoxifying acids, and antioxidants, which are thought to support balanced health and energy by strengthening the immunity.*

Because of its refreshing flavour palate, kombucha is an excellent alternative to regular soda's, but with much less sugar (only 3,8gr/100ml in Yugen Kombucha compared to 10gr/100ml for typical soda) and with the potential added health benefits.

Can I have too much kombucha?

As with most food and beverages, moderation is a good rule of thumb. Every kombucha drinker is different, listen to your body and drink as much as you feel like.


Is Kombucha a fungus or a mushroom?

Neither. Kombucha is fermented by using a symbiotic culture of bacteria and yeast (scoby). This scoby sometimes takes the form of a rubbery disk which may look like a fungus or mushroom (with some heavy imagination) but that's about it. Biologically the two have very little in common. 






Does Kombucha contain alcohol?

Kombucha contains trace amounts of alcohol. Most of the alcohol in kombucha is metabolized into acids, but some remnants are left in the finished product. Every batch of Yugen is thoroughly checked and we guarantee that our kombucha never contains more than 0,3% alcohol. 


Why is Kombucha more expensive than regular sodas?

Crafting premium authentic kombucha takes time. Unlike regular sodas, brewing kombucha is not just mixing a couple of ingredients. From start to finish our brewing process takes about one months. On top of that does Yugen only use the highest quality organic ingredients. This means real tea leaves, dried herbs and pure fresh juice, so no aromas, extracts or concentrates. 






Does Kombucha contain caffeine?

The caffeine from the original tea steeping is not lost in the culturing process. Although the amount of caffeine in kombucha is fairly small, it is worth mentioning.


Is there any sugar in Kombucha?

To brew and ferment kombucha, sugar is needed. The majority of this sugar is consumed by yeast and bacteria during the fermentation. That's why kombucha is low in sugar even though you need sugar to make it.
